Sear the beef fillet on all sides on a high heat for 2-3 minutes, then place in the oven at 180c for 10-15 minutes depending on how rare you want it.

Remove from the oven and allow to rest in a warm place for 15 minutes.

Please can somebody tell me WTF is this proverbial "warm place" ???

I think it means don't out it somewhere like a porch, conservatory, where it is colder than the remainder of the house!

if you have a grill above your oven which has not been used or turned on that will be ideal as the heat from the oven will escape upwards thus making the grill the poverbial warm place!

The problem is that I want my beef medium-rare. Leaving the damn thing in a "warm place" will over cook it.

Why do these chefs insist that the meat is left to rest, in this case, for 15 minutes ??

And the title of the book that I using is "Gordon Ramsay Makes its Easy".

I think it is to bring out the flavour. You aren't supposed to eat steak hot, should only when it is warm otherwise it spoils the flavour.

just grill it for 2 mins either side,chuck it on a plate and then whack it down yer neck mate.....lubbly jubbly

Hence why you keep it in a warm place - the grill above the oven as was suggested is ideal. Then it will be spot on. You have to do your steak properly otherwise it just isn't worth it. Nothing worse than a steak ruined.

It was easy...... I managed to get good advice from the BBC Food Forum !

After removing from the oven, the meat was wrapped in foil for 10 minutes, thus giving it the necessary resting time, but also stopping it from getting too cold. Not exactly rocket science !

The result was perfect medium to medium-rare.  xmasgrin
